Eat Green Leafy Vegetables to Improve Your Eye Health
Nutritional research suggests that the more green, leafy vegetables you eat, the healthier your eyes and vision will be. Broccoli is a great natural source of dietary fiber, vitamins C, E, K and A along with other antioxidants such as carotenoids (lutein, zeaxanthin), beta-carotene, manganese and zinc in beneficial amounts.
Antioxidants lutein and zeaxanthin, found in the pigment that produces the dark green color in these types of vegetables, are also found in the retina of the eye. Studies have shown that by eating a diet rich in lutein and zeaxanthin will increase the amount of pigment found in the macula –the central area of the retina. More pigment means more protection against eye disease such as macular degeneration!

You Are So Beautiful to Me Broccoli
What You Need:
- 1 ½ cup mayonnaise
- 1 cup sugar
- 3 tsp. red wine vinegar
- 1 box shell noodles
- 1 lb bacon; can substitute a bag of bacon bits
- 3 cups broccoli florets cut small-can add more or less as needed
- Red onion to taste
- Shredded mozzarella cheese
- Add sunflower seeds or almonds for added crunch & a dose of Omega-3!
- Optional add grapes or raisins for a touch of sweet!
Directions:
Cook pasta according to package directions. Drain and rinse pasta under cold water. Place pasta in a large serving bowl, add broccoli, bacon, cheese, onion and toss to combine. Combine the mayonnaise, vinegar and sugar together, whisk until smooth. Pour over salad and mix well. Season to taste with salt and pepper, chill and serve.
